Oysters and sparkling wine are a match made in heaven. Try these serving suggestions for elegant entertaining.
Ingredients
- 12 freshly shucked Sydney Rock or Pacific oysters
- 2 lemons
- Rock salt for serving
- 2 tablespoons extra virgin olive oil
- 2 tablespoons chardonnay vinegar
- Salt flakes and freshly ground white pepper, to taste
- 2 golden shallots, very finely diced
- \u00bd cup mirin
- \u00bc cup rice vinegar
- 3 teaspoons wasabi paste
- 1 Lebanese cucumber, seeded and finely diced
- 1\u00bd tablespoons pickled ginger
Method
- The traditional way: freshly shucked natural oysters served chilled in a half-shell on a bed on rock salt. A squeeze of lemon and a little black pepper is a simple and classic dish.
- Shallot Vinaigrette: if you want to dress up your oysters, try combining oil, vinegar, salt, pepper and shallots to serve with your oysters.
- Wasabi Dressing: For something a little more fancy, combine mirin, vinegar, wasabi and cucumber. Lift oysters out of their shells, divide cucumber salad between shells and place oysters on top. Garnish with a little pickled ginger and serve.
